Vegan Stuffed Peppers


Hey guys, this dish is very delicious, it would make a great mid-day snack and will keep you full. Here is the recipe:

One thing I love about this recipe is that it is very SIMPLE and cost friendly. You do not need major cooking skills to make this dish and I know most of you will have lots of fun making it. If you have date night, this will make a great appetizer. If you feel like sitting and letting the oven do the job, this is your dish.


Here is the thing, you get better at cooking the more times you do it; but that's with anything! How many times this week have you pushed your cooking skills? This will be a great start. Cooking is a sport, just like everything else we must practice, practice, practice.


Not only does it push your cooking skills, majority of these ingredients are fresh and whole! These type of meals build your immunity to stay optimal and clean, just like a Plant Machine.


Ingredients

  1. 2 Bell peppers

  2. 4 jalapeño peppers

  3. Mushrooms

  4. 1 Onion

  5. 1 bunch of Cilantro

  6. 1 bunch of Spinach

  7. Diced tomatoes

  8. Olive oil

  9. Bread crumbs

  10. Salt/pepper/garlic herbs/Red pepper flakes/ Paprika

  11. Vegan cream cheese (or hand made cashew sauce with soaked cashews blended)

  12. Vegan sour cream



Instructions

1. Pre heat oven to 350-400 degrees for 5min

2. Wash/ clean veggies

3. Cut jalapeños in half or just cut the top off, remove seeds and insides with a spoon or fork

4. Cut the top of the bell peppers off, remove seeds and insides with a spoon or fork


5. Coat peppers with olive oil and salt, place on pan

6. Finely Chop 1-2 cups of mushrooms, 1 onion, 1 bunch of cilantro, 1 handful of spinach, & 1 tomato. Add to a bowl

7. Add 1/4 cup of bread crumbs to the bowl

8. Add 1 cup of vegan cream cheese

9. Add 1/4 cup of vegan sour cream

10. 2 tables spoons of oil

11. Add all seasoning

12. Mix together (taste test to see if it’s to your liking)

13. Stuff peppers, cover top (use foil if needed)

14. Bake for 1 hour or until the peppers are soft and tender
